We’re big admirers of the annual trilogy series at Northern Monk, designed to showcase the core elements that shape each and every beer. Up first we’re trying they’re take on the most overlooked ingredient of all, Yeast!

This collab with the wonderful 18th Street comes in at an evening-ending 9% so it’s fair to say we were a little trepidatious. Thankfully it utilises this booziness to great effect. It’s all funky, estery gold followed by a decent hit of peppery spice - which for our taste was initially a little much before it quickly died down.

With aromas more akin to a herb garden than a beer, and with a bonkers, thick, clovey profile this could easily be too much for the faint-hearted. But, this extreme emphasis on Yeast proves just how much flavour it can employ. It’s a pretty spot-on undertaking then, and it’s also a pretty staggering beer, if you have the Saison nerve!
